1) Your Brain Needs Glucose, How Do You Even Think?

Quick answer: Your brain does need glucose, but not in big, massive quantities! Your liver can make enough glucose to easily handle the brain’s requirements!

2) Don’t You Need Carbs for Energy?

Quick answer: No! We run great burning ketones.

3) How Do You Get Fiber with KETO?

Quick answer: Vegetables and some fruits.

4) How Do You Exercise Without Carbs?

Quick answer: Quite nicely!

5) Doesn’t All That Fat Give You Heart Disease?

Quick answer: Not usually, but we are all different! Total cholesterol may go up, but that is usually accredited with higher levels of good HDL cholesterol.

6) You’re Just Losing Water Weight, Not Fat

Quick answer: All diets have water weight loss in the beginning. Keep going with LCHF and you’ll start burning that fat!

7) I Heard the Keto Diet Kills Your Gut Bacteria

Quick answer: Not if you eat “good foods”. See if you can tell which one is good and which one is not good: A)Bologna and American cheese or B)Grass fed rib eye steak with bleu cheese butter (butter from grass fed cows) and buttered broccoli. Both are meat and cheesy, but B is a whole lot better because it feeds the good gut bacteria while A feeds the bad bacteria.

8) Keto Isn’t Sustainable

Quick answer: Sure it is! From the “yes, I’ll eat this way for the rest of my life” to “its good for the environment” viewpoints.

The Best Baby Back Ribs Ever!

I’ve cooked tons of Baby Back Ribs over the last 25 years as a chef in the restaurant biz. But today I had the best batch ever! On top of that it turned out to be easy peasy. First, you have to have a good product to start with and I bought the meatiest ribs ever from Costco! Holy cow, they were the best. Like I said I’ve cooked a lot of baby backs over the years, purchased from quality meat vendors, but these were perfect!

And second you have to settle on the cooking method. In my restaurants I actually braised the ribs for 3 hours in the oven after putting on my special rub. I used my special rub, but I used my InstaPot pressure cooker to do the major part of the cooking. Instead of 3 hours, they cooked perfectly in just 30 minutes!

So here we go!

Ingredients

  • 1 full slab of baby back ribs
  • 1 tbl olive oil
  • 2 tsps smoked paprika
  • 1 tbl dried oregano
  • 2 tbls minced fresh garlic
  • 2 cups white wine (for cooking, not for you!)
  • your favorite low sugar BBQ sauce

Method for the Best Baby Back Ribs

  1. Cut the slab of ribs in half so they fit in the pressure cooker
  2. Pour the olive oil on the ribs and rub to spread it all over
  3. Sprinkle the ribs with the smoked paprika, oregano and minced garlic
  4. Rub into the meat
  5. Put the white wine in the pressure cooker and then place the ribs in the pot
  6. Close the lid and press the pressure cook button, set the timer for 30 minutes on high pressure
  7. When the cook time is up, release the steam from the pressure cooker
  8. Carefully take the ribs out, brush with you BBQ sauce and then grill or broil them to caramelize the sauce
  9. Eat with your favorite vegetable!

Note: If you don’t have a pressure cooker, place the ribs in a roasting pan, add the wine and 4 cups of water, cover and bake at 350 for 3 hours.

Flaxseed is good stuff! It has four times more Omega-3s than Omega-6s, so by eating flaxseed you can bring your Omega-3 to Omega-6 ratio back in balance to reduce systemic inflammation. I put some flaxssed oil on cottage cheese and it that or I add some flaxseed oil to my smoothies.

Did you know cherries contain natural melatonin? That’s right! Eat some cherries or drink some tart cherry juice and get a good nights sleep! I buy frozen tart cherries from Costco and use them in my smoothies. Read more here!
