Practice Proper Sanitation!
When handling and working with food it is necessary to practice proper sanitation, particularly with raw meats and especially chicken. Wash your hands well before and after handling and clean work surfaces and cutting boards thoroughly. Cook chicken to an internal temperature of 165 degrees. It is also recommended to cook ground meats to this temp also. I know, a lot of people like their burgers medium or medium rare, especially grass fed ground beef because it could dry out, but it really is up to you.
Cross contamination is the most common mistake made. For example, you cut up a chicken and then use the same cutting board to prep a salad without washing the cutting board or not washing it well enough. I actually have a number of different colored cutting boards. Green is for veggies, yellow for chicken, red for beef, etc. I don’t have a blue one for fish, so I use the beef board! They get washed and sanitized after every use! And don’t forget to wash those hands. A general rule of thumb in the restaurant biz is to lather up those hands and sing the happy birthday song while scrubbing. Then rinse well. I have a motion detector water faucet so you don’t have to touch anything with your contaminated hands until they’re clean!
Reheating food to proper temperatures is important too. Back in the day when I ate fast food, there was a special to buy one burger and get a second one free. So when I get home, I eat one right away and put the other one in the fridge for later. So later comes and I take it out of the fridge and put the whole thing in the microwave. I don’t heat it up much because I didn’t want to ruin the crispy lettuce and the cold mayonnaise. I eat it and it tastes great! A couple hours later I thought I was going to die! I didn’t bring that burger patty up to temp to kill whatever was there, probably E. Coli, and I paid the price. I should have taken the patty out and nuked it good. The best way to avoid this is to not eat fast food burgers anymore and I’ve been doing pretty good in that department. Fast food is not Primal. Stay away! But whatever it is your reheating, just make sure it gets hot.
