Salmon Salad

Sounds kind of exotic, but its just made from what I have in my pantry including canned salmon! Need something quick and easy? Don’t want to cook and do a whole lot of dishes? Every now and then, that would be a definite YES! So I am adding another category to my blog and I’m going to call it LCHF Pantry Meals. There are a lot of good options out there now for Primal/Paleo foods that can help us save time in the prep area and cleanup area. For example, cauliflower rice. I’ve been making that for years from scratch, but now you can buy frozen organic cauliflower rice from Costco! I’m still going to make cauliflower rice from scratch to make pizza crusts and cauliflower mashed when I have time to plan ahead, but its sure nice to have some ready to go in the freezer at a moments notice.

So let’s talk about this meal. I got a 6 ounce can of wild Alaskan pink salmon that I bought from Costco. I got a jar of Chipotle Lime Mayo from Primal Kitchens that’s made with organic ingredients including Avocado Oil (so no canola and soybean oils!) and cage free eggs. Good stuff! To finish the dish, I have some store bought Kimchi (I do make my own every now and then, but I’m out) and some raw organic sauerkraut I bought at Costco, which is by far the best tasting sauerkraut I ever had! I also added a stalk of celery and one scallion to the salmon, mayo mixture for flavor and crunch.

Salmon Salad
These items were in my pantry and I made a quick and easy LCHF Primal meal with them!

Ingredients:
1 six ounce can wild salmon
1 tbl Primal Kitchen Chipotle Lime Mayo
2 tbl raw organic sauerkraut
2 tbl organic kimchi
1 stalk celery, sliced
1 scallion, sliced thin

Instructions:

Open can of salmon and drain. Put salmon in serving bowl with mayo, scallion and celery. Mix together and push to one side of bowl. Add kimchi and sauerkraut to the empty side of the bowl. Enjoy!
