Hey there! A while ago I wrote a post about chaffles. Chaffles are waffles made with cheese, hence the name chaffles. So, as good as those are, these could even be better! Well, in a different way, of course. So what are “these”? Here’s a pic:
So you take your favorite chaffle recipes and instead of cooking in a waffle maker, you spread it out on some oiled parchment paper in a pan and bake it in your toaster oven at 350 for 15 minutes. When its done it’ll look like this:
So, you cut it down the middle, then into strips and dip the strips in marinara like you would cheese sticks. Tastes great! My wife even likes them! I could take that same recipe, cook them in a waffle maker and my wife says they taste too eggy. But baked this way its good! Go figure! Here’s the link to the chaffle post for the recipe. I used a mozzarella and provolone cheese mixture I get at Costco. You can also add a tbl of almond flour to give it a little more body and some oregano, basil and garlic powder to go over the top Italian! Enjoy!
You now how there’s all these new low carb high fat cheese crackers out there? I just bought some bacon cheese crackers made with almond flour at Costco. So I guess the selling point is the facts that there is no gluten and are high fat. But the carbs are just a tiny bit below that of a Triscuit! So they are not low carb or as low carb as one would like because you are more than likely to eat a whole bunch and be done with carbs for the day.
But what if you can make a tasty cheese cracker made with 100% cheese that have no gluten, no grains and have little to no carbs? Its a game changer! They are easy to make too, so lets get started…
1 package of sliced cheese like cheddar, swiss, colby or Muenster like the variety pack you can get in Costco
Various dried spices that I’m sure you have in your cabinet right now at this very minute!
Preheat your oven to 250 degrees
Line 2 baking sheets with parchment paper. You can do more if you want to, but this is going to make about 40 cheese crackers
Cut slices of cheese into 4 quarters and place each quarter on the parchment paper with about a half inch between each quarter.
When you have completed the two sheet pans you can either bake them as they are (plain, which is good) or sprinkle them with some herbs and spices. Sometimes I use Mrs. Dash No Salt, or just basil and oregano, or salt and pepper, or whatever! Experiment!
Bake at 250 for 30 minutes
I use these for eating guacamole and sometimes I make nachos with no chips. I have these chips on the side which I use to scoop up the nachos mixture.
No tortilla chips here! Crunchy chips made from cheese! If you’re strict Paleo, you don’t eat cheese. I’m Primal, so I can eat good quality, high fat dairy! Dairy is insulogenic so it pumps up your insulin which is your fat storage hormone. So go easy on the dairy if you want to focus on losing weight. Nacho Meat Mixture
1 lb organic ground beef
1 tbl cumin
1 tbl chili powder
1 tbl Mexican Oregano (Mediterranean Oregano is ok)
2 tsp granulated garlic
2 tsps granulated onion
salt to taste
1 cup salsa
1/2 cup wine, white or red
Topping – Grated cheese, diced sweet bell pepper, Jalapeno, red onion, fresh cilantro, sour cream, guacamole, salsa
Heat pan over medium heat
Add ground beef and break apart with a wooden spoon
Continue to cook until all beef is cooked and fat has been rendered
Drain out the fat. What I would do is put a strainer in a metal bowl and add the meat to the strainer letting the fat run into the bowl. When the fat has stopped dripping, put the meat back into the pan and turn the heat back on.
Add the next 6 ingredients and stir to combine
Add the salsa and wine and simmer for 2 minutes
Turn off the heat
Put some meat mixture in a bowl and top with your choice of toppings!
Enjoy with some Cheese Crackers!
