You can use cauliflower to make “mashed potatoes”, just boil until very soft, drain and process in a food processor with some cream, butter and salt. Or take raw cauliflower, pulse in your food processor to make “rice” sized pieces, then place in boiling water for a minute or two, then drain! Cauliflower rice!
You can use celery root to make “mashed potatoes” or “French fries”
You can use a turnip to make “hash browns”
Parsnip puree is also good for a mashed potato replacement.
Rutabaga is good for mashed. My mother would also use carrots and turnips and call the resultant mashed “root mousse”!
